Hi Shane, I just wanted to say thank you for these simple recipes. What a relief! Last year was my first Vegetarian thanksgiving, and I worked SO hard to make all these complicated dishes to make sure my family (very picky, unhealthy-eating relatives) was happy. I also felt the need to “prove” that healthy food could taste good. While everything came out delicious, it was just an enormous effort and I never wanted to do it again.
I’ve been eating WFPB for a few months now and love it, but I was dreading Thanksgiving again. But now I have some simple recipes, that won’t have me buying expensive ingredients or slaving in the kitchen forever. Excited to try these.
