This Mixed Berry Vegan French Toast Casserole is the ultimate brunch recipe. All the amazing flavor of regular french toast in a delicious breakfast casserole. 

Prepare

1.

Place cubed bread in a 9x13 inch baking dish lined with parchment paper.

Make The Custard

Whisk milk, maple syrup, vanilla, ground flaxseed, arrowroot powder, cinnamon, and baking powder together.

Pour & Bake

Pour the custard over the bread, cover with aluminum foil and bake for 30 mins. Remove foil, cover with berries, and bake for 20 more minutes.

Top with vegan whipped cream, warm maple syrup, and fresh fruit.
