Welcome to the first, of what I hope to be many, in a brand new series called “Simple Supper Menu.” It’s a collection of healthy, vegan meals that are easy, stress-free, and delicious. Practical, not pretentious, plant-based recipes.
It’s hard getting a meal on the table at the end of an exhausting day in the middle of the week. And, trying to cook something healthy feels even more overwhelming. But, I’m here to help and show you that it doesn’t have to be that way.
Each week I’m going to provide you with a combination of oil-free, plant-based recipes that will create an entire meal for you and your family. These recipes are vegan, easy, quick, delicious, and healthy. And, my hope is this will help to remove a little of the worry and stress from your life.
There’s enough chaos around us in the world and the family table should be a place of rest, not chaos. It’s where we come to be fed, not just physically, but emotionally and spiritually. It’s a place to connect with those we care about – family and friends. And, what better way to love people than by feeding them?
I want you to use the Simple Supper Menu series as of way of telling the stress and chaos, “YOU ARE NOT WELCOME HERE!” It’s time to start winning. And, there’s no better place to do that than in the kitchen and around the table.
I realize it’s just one meal a week, but hopefully, it’s a time you will look forward to and will give you a little more nourishment, peace, and happiness.
