This week’s Simple Supper menu is filling, delicious, and SIMPLE! Rich and Creamy Sun-Dried Tomato and Kale Pasta with decadent Chocolate Peanut Butter Hummus for dessert. Easy, healthy, and full of flavor.

We’ve been starting to hang out with more friends and “cautiously” hosting dinners in our home as things gradually reopen. And, having friends and family around the dinner table again has been a balm for the soul. And, since the weather has been so great we’ve dined on the patio a lot more as well.
One of my most requested dishes is this Creamy Sun-Dried Tomato & Kale Pasta. FYI, if you don’t like kale you can sub with spinach. It’s so easy to make and requires very little time and effort. And, for dessert, we just cut up some bananas and apples and serve with my Chocolate Peanut Butter Hummus.
You can have a delicious and healthy dinner with dessert ready in as little as 30 minutes.
