Summer is here so it’s time to capitalize on all the delicious produce that is affordable and abundant. Simple Supper Menu #17 does just that with these amazing Vegan Stuffed Bell Peppers.
Meal planning can be tough. And, with all that’s going on in the world right now, it can almost feel impossible. Now, more than ever, it’s important to stay healthy. The best way to do that is by watching what goes on your plate. But, thinking about that makes things even more stressful.
My hope with these Simple Supper Menus is to ease a little bit of stress and anxiety. So, I’ve tried to remove all the thought that goes into planning dinner for at least one meal during the week. Sitting down with my family at the dinner table is one of the few things that brings me comfort in the middle of all the craziness. So, you should have that luxury as well.
This week’s menu gives you Healthy Baked Tortilla Chips to enjoy with your favorite salsa as an appetizer. For the main course are my Vegan Stuffed Bell Peppers. And, dessert is a delicious Chocolate Mousse. And, it’s all HEALTHY!
