Simple Supper Menu #2 – Soup Night

Eating healthy doesn’t have to be complicated or boring. So, if getting dinner on the table during the week feels stressful then welcome to the Simple Supper Menu! These WFPB recipes are healthy, delicious, and extremely easy to throw together.

Simple Supper Menu – Soup Night

So, it’s the second week of the Simple Supper Menu series and I’m blown away by the response. I guess we’ll keep it going:)

I think this week will be even easier than the last one, but the menu is still filling and delicious. And, you get an appetizer this week. Uh, oh. We gettin’ fancy ’round here.

Start the evening with my Creamy & Smooth Oil-Free Homemade Hummus. Serve this with fresh-cut veggies or whole-grain crispbread. These Wasa products are awesome and my kids love them.

Your main dish this week is my easy Instant Pot Vegetable Soup. I love making this soup for several reasons:

  • You more than likely will have leftovers. So, it’s possible you got lunch for the next day.
  • It can be made in an Instant Pot or on the stovetop. And, I have instructions for both.
  • It’s made with frozen vegetables so there’s very little cutting or prepping involved.

And, finally, there’s my Easy 5-Ingredient Whole Wheat Beer Bread. Even if you’ve never made homemade bread you can make this. It’s super easy and the perfect side for this soup. I highly doubt there’ll be any leftovers.

This week's Simple Supper Menu is super easy but doesn't skimp on flavor or satisfaction. A delicious hummus appetizer, hearty vegetable soup, and wonderful homemade whole-wheat bread. Enjoy!

Instant Pot Vegetable Soup

My Instant Pot Vegetable Soup is healthy, hearty, and comforting as soup should be. It uses frozen vegetables so there's very little "work" to do in order to get this to the table. And, even if you don't have an Instant Pot I've no worries. I've included stove top directions as well.

Easy 5-Ingredient Whole Wheat Beer Bread

Never eat soup without bread - it ain't right. And, if you really want to take it over the top eat it with homemade bread, My Easy 5-Ingredient Whole Wheat Beer Bread is amazingly simple and absolutely delicious. It's crunchy on the outside and soft on the inside. The perfect compliment to my vegetable soup.

Creamy Smooth Oil-Free Homemade Hummus

My Creamy Smooth Oil-Free Hummus is better than store-bought. There's no oil, it's just as smooth, and it's absolutely delicious. Serve this before the meal with fresh veggies, whole grain cracker, or just eat it with a spoon.
