Simple Supper Menu #26 is all about cozy Fall flavors and simplicity. This week’s menu is all that and more with Vegetarian Pumpkin Chili, Vegan Jalapeño Cheddar Cornbread Muffins, and the best Vegan Apple Crisp on the planet.
You don’t have to get complicated to put together a delicious and healthy meal for your family. For me, the more complicated the recipe the more chances there are of screwing it up. That’s why I love soup and chili recipes. You basically throw everything in a big pot and let it get hot.
I’m so excited about the menu this week. Why? Because Fall is my favorite time of the year and these recipes embody all those warm, comforting, and cozy spices. A big pot of delicious Pumpkin Chili. Savory vegan jalapeño cheddar cornbread muffins. And, for dessert? The best Vegan Apple Crisp you will ever have.
This entire menu comes together in about an hour. But, if you’re a planner, unlike me, these recipes are excellent for making ahead of time and simply reheating when you’re ready to serve.
Helpful Tips & Suggestions
Pick a night you want to serve this menu. Then, make one or all of the dishes ahead of time. When you’re ready to enjoy simply pull them out of the fridge, heat, and eat. FYI, the Vegan Apple Crisp is great for making and freezing until you’re ready to enjoy it.
Simple Supper Menu also makes a good quantity of food. So, in the case that you have leftovers you can store these dishes in the fridge and enjoying for the rest of the week.
