I love recipes that are interchangeable and work for any meal. And, all of these fit that description. Many consider a frittata more of a brunch dish. But, you will soon see it’s perfect for dinner. It’s filling, easy to throw together, and absolutely delicious!

This week’s menu is proof you don’t need a ton of different dishes to make an incredible meal. Simple Supper Menu #27 has everything you could ask for:

  • Vegan Frittata: a filling and savory entree
  • Oil-Free Oven Roasted Potatoes: a crispy satisfying side dish like potatoes works for any meal. And, we’re keeping it extra healthy by leaving out the oil.
  • Cashew Sour Cream: this delicious condiment is tangy, creamy, and perfect for topping your frittata.

This is one of my family’s favorite meals and I’m sure it will be the same for you and yours.

Simple Supper Menu Helpful Suggestions

Plan Ahead!

The frittata and cashew sour cream are excellent for making a head of time. Then, when you’re ready to serve simply reheat the frittata and you’re ready to go.

Layout Your Ingredients.

A good rule of thumb is to layout all your ingredients before you start cooking. You don’t want to get halfway through a recipe and realize you’re out of an ingredient. (I speak from experience)

Read The Recipe Twice.

One of my closest friends, Donya from A Southern Soul, gives this advice to her readers and it’s so simple, yet profound! Little things like this help you to become more comfortable and confident when you’re cooking.
