This week’s menu is about simple and versatile recipes. An amazing vegan frittata, crispy oil-free oven roasted potatoes, and to top it all off, literally, cashew sour cream. Simple Supper Menu #27 is easy, comforting, cozy, and delicious!
I love recipes that are interchangeable and work for any meal. And, all of these fit that description. Many consider a frittata more of a brunch dish. But, you will soon see it’s perfect for dinner. It’s filling, easy to throw together, and absolutely delicious!
This week’s menu is proof you don’t need a ton of different dishes to make an incredible meal. Simple Supper Menu #27 has everything you could ask for:
- Vegan Frittata: a filling and savory entree
- Oil-Free Oven Roasted Potatoes: a crispy satisfying side dish like potatoes works for any meal. And, we’re keeping it extra healthy by leaving out the oil.
- Cashew Sour Cream: this delicious condiment is tangy, creamy, and perfect for topping your frittata.
This is one of my family’s favorite meals and I’m sure it will be the same for you and yours.
