One of my favorite meals growing up was meatloaf, mashed potatoes, and green beans. But, because I grew up in the south it wasn’t the healthiest of meals. There was lots of meat, butter, milk, and pork (in the green beans). Yes, where I’m from we used pork as a seasoning.
All of these delicious recipes use whole-food, plant-based ingredients and contain no oil. But, they are not absent on flavor and satisfaction. The main event of this meal is the vegan meatloaf. And, IF you have any leftovers, it makes a great sandwich the next day.
The mashed potatoes with gravy and skillet green beans round out this hearty homecooked meal. And, no one will have a clue they’re eating healthy.
