‘Tis the season many people are reminded of what a poor shot Cupid really is. Because nothing says “I love you” better than dead vegetation, saturated fat, and processed sugar products purchased at the last minute. Be still my beating heart. PUN TOTALLY INTENDED.
Alright, just joking…kinda. I’m not really that cynical. Valentine’s Day can be special and romantic. For some, it means a first kiss, a wedding proposal, or an intimate evening. But, it can also be fun and creative. It doesn’t have to be celebrated just with a significant other.
My wife and I celebrate with our single friends and have done so for the last 15 years. We cook a big meal, watch a movie, usually a comedy, and celebrate what’s come to be known as Singles Awareness Day or S.A.D. (That was their idea…not mine 😉)
No one takes themselves too seriously. We have some great laughs, fill our bellies, and simply enjoy life and one another. It’s one of our favorite things to do during the year.

Bottom line: Regardless of how you choose to celebrate Valentine’s Day, Simple Supper Menu #32 can be romantic, formal, or fun. It’s perfect. And, each recipe takes less than 30 minutes to prepare, uses normal ingredients, is completely plant-based, and healthy.
