Taco night is always a winner when you can’t decide what to make for dinner. This week’s menu included the best vegan taco meat and even a recipe for oil-free crunchy taco shells. These recipes are healthy, filling, vegan, and absolutely delicious!
Growing up, taco night was my favorite night. I loved making my own taco, but it also meant tater tots. Yes, tater tots were our main side dish. So, I thought I would make this week’s menu a “throw back” of sorts.
And, with the crazy weather week we’ve had with all the ice and snow, a little comfort food is just what the doctor ordered.
My vegan cauliflower taco meat is the star of the show. The supporting cast in this Simple Supper Menu ain’t bad either. My Crunchy Baked Taco Shells, Vegan Cheese Sauce, and Tofu Sour Cream will make this a taco night to remember. And, for a filling side there are no tater tots, but these delicious oil-free Oven Roasted Potatoes.
This meal is a great way to get the family involved and kids love making their own tacos. They can stuff it with salsa, guacamole, lettuce, and then top it all of with my amazing vegan cheese sauce and sour cream.
Oh, and let’s not forget dessert. Remember classic peanut butter cookies with the cool criss-cross pattern on top? Yep, you guessed it. And, you won’t believe how easy they are to make.
