1-Pot meals are the best! You’re able to create something healthy, delicious, and satisfying in very little time. This week’s Simple Supper Menu does just that with my Sweet Potato Black Bean Chili and homemade vegan Cornbread.

You don’t need to have 4 or 5 dishes to make a complete meal. It’s nice when it happens, but it’s not necessary. And, the whole purpose of the Simple Supper menu is simplicity so you can have more time at the table with your family instead of the stove.
This week the Simple Supper Menu does just that with my Sweet Potato Black Bean Chili and Homemade Cornbread. Winner winner! This chili is one of my family’s favorite recipes. It’s loaded with wonderful veggies, satisfying sweet potatoes, and hearty black beans that are fiber and protein-rich.
This entire meal takes no time to throw together and can be on your table in as little as 30 minutes. Sound good? I thought so.

I made this last week. It was quite tasty but made too much for hubby and me. I took it over to a neighbor’s and they also loved it. In the future I will 1) make less by 1/2 the recipe and 2) use all diced tomatoes. by squeezing the whole tomatoes, I got the juice all over myself and the kitchen.
Can you just put all the ingredients in the instapot and cook it?
Yes, you could cook it for about 4 minutes. But, because the black beans are already cooked they might come out kinda mushy.
