There’s a lot of crazy going on in the world right now. But, behind every cloud, there is a silver lining. For me, that silver lining is being forced to slow down, take a breath, and capitalize on the time I have with my family.
One of the best ways to spend that time is taking advantage of having meals around the table. And, this week’s Simple Supper Menu is perfect for that. These Vegan Stuffed Shells with tofu ricotta are cheesy, rich, delicious, and most importantly, healthy. Serve it up with a simple green salad of your choice and top it with my new Lemon Tahini Dressing. Outstanding!
