Ingredients

  • 1 cup of steel-cut oats
  • 2 cups unsweetened almond milk
  • 1 cup of water
  • 2 cups fresh cranberries
  • Zest and juice of 2 oranges
  • 1 teaspoon ground cinnamon
  • 1/4 cup maple syrup (more to taste)
  • 1/4 teaspoon nutmeg
  • 1 tablespoon chia seeds

Optional Toppings

  • 1/4 cup toasted pecans
  • shredded coconut
  • walnuts
  • dried fruit

Instructions

  1. In a large pot, combine oats, almond milk, and water
  2. Bring to a boil, then reduce heat to low
  3. Add 1.5 cups of cranberries, fresh orange juice, and orange zest
  4. Simmer for 20-25 minutes, stirring occasionally until oats are tender
  5. Stir in cinnamon, maple syrup, and chia seeds
  6. Let stand for 5 minutes to thicken
  7. Serve topped with remaining cranberries, pecans, and a sprinkle of nutmeg

Notes

Storage: Leftovers can be refrigerated for up to 5 days. Reheat with additional plant milk to the desired consistency.
