Vegan Streusel is a sweet and crumbly topping perfect for baked goods like muffins, apple crumbles, coffee cakes, quick breads, and more! Oil-free, gluten-free, and made with just 7 ingredients!

Ingredients

Scale
  • 1/2 cup almond butter (or your favorite nut or seed butter)
  • 1/4 cup maple syrup
  • 1 teaspoon pure vanilla extract
  • 1/2 cup rolled oats
  • 1/4 cup almond meal (ground almonds)
  • 1/4 cup chopped nuts (such as almonds, pecans, or walnuts)
  • 1/4 cup coconut flakes (optional)
  • 1 teaspoon ground cinnamon
  • Pinch of salt

Instructions

  1. Preheat the Oven: Begin by preheating your oven to 350°F (175°C).
  2. Prepare a Baking Sheet: Line a baking sheet with parchment paper or use a silicone baking mat to prevent sticking.
  3. Prepare the Wet Ingredients: Combine the almond butter, maple syrup, and vanilla extract in a large mixing bowl. Stir until you achieve a smooth, thick paste-like consistency.
  4. Add Dry Ingredients: Mix in the rolled oats, almond meal, chopped nuts, coconut flakes (if you choose to use them), ground cinnamon, and a pinch of salt. Stir until all the ingredients are thoroughly combined. The resulting mixture should be crumbly but cohesive enough to hold together when pressed.
  5. Crumble onto Baking Sheet: Spread the streusel mixture evenly onto the prepared baking sheet. Use your fingers or a fork to break it into small clusters.
  6. Bake: Place the baking sheet in the preheated oven and bake for approximately 15-20 minutes or until the streusel turns a beautiful golden brown. Keep a watchful eye to prevent over-baking and burning.
  7. Cool: Once baked to perfection, remove the streusel from the oven and allow it to cool completely on the baking sheet. As it cools, the streusel will become wonderfully crisp.

Equipment

Notes

Cool It: Ensure the streusel has cooled completely after baking. This step is crucial to prevent moisture buildup.

Airtight Container: Transfer the cooled streusel into an airtight container, like a glass jar or a plastic container with a tight-fitting lid.

Refrigerate or Freeze: To prolong its shelf life, you can refrigerate the streusel for up to two weeks. For even longer storage, freeze it for up to three months. Ensure the container is well-sealed to prevent freezer burn.

Thawing: If you freeze your streusel, thaw it in the refrigerator overnight before using it in your recipes.
