1 tablespoon of Dijon mustard (regular yellow mustard can work in a pinch)
1 tablespoon pure maple syrup (agave syrup can be used as an alternative liquid sweetener)
2-3 tablespoons cold water (adjust for desired consistency)
Salt and black pepper to taste
Instructions
Combine your tahini paste, Dijon mustard, and lemon juice in a small bowl or mason jar. Using a small whisk, blend until smooth.
Add the maple syrup and continue whisking. You’ll notice the mixture beginning to thicken – this is normal!
Gradually add cold water, one tablespoon at a time, whisking continuously until you reach your desired consistency. The amount of water needed may vary depending on your tahini’s thickness.
Season with salt and black pepper to taste.
Store in an airtight container or mason jar in the refrigerator.
