Bring a large pot of water to a boil over high heat and cook the ramen according to the package instructions (usually 5 minutes).
Prepare the peanut butter sauce by combining the peanut butter, sriracha, soy sauce, and maple syrup in a small bowl and whisking until it forms a smooth paste. Add 2-4 tablespoons of hot water and stir until you get the consistency you desire. I usually add about three tablespoons.
Once the ramen has finished cooking, drain the ramen noodles and return them to the pot. Pour the spicy peanut butter sauce over the ramen noodles and stir until all of the noodles are evenly covered in the sauce.
Divide the spicy peanut butterramen noodles between two bowls, top with chopped green onions, and chopped peanuts, and serve immediately.
Once the Spicy Peanut ButterRamen Noodles have cooled to room temperature, place the leftovers in an airtight container and store in the fridge for 2-3 days.
Reheat the ramen in the microwave or on the stovetop. You will need to add 2-3 tablespoons of some liquid like water or veggie broth. The peanut sauce will thicken as it sits in the refrigerator.
