Ingredients you’ll need

The best recipes are usually the easiest and cheapest and this recipe is no different. All you need are five simple ingredients to make this Spicy Peanut Butter Ramen Noodles recipe.

Ingredients.
  • natural peanut butter
  • sriracha
  • low-sodium soy sauce
  • pure maple syrup
  • ramen noodles (I like the Lotus brand millet and brown rice noodles)

See the recipe card below for exact amounts and detailed instructions.

How to make spicy peanut butter ramen noodles

You can have these delicious spicy peanut butter noodles on the table in no time. Once the prep is done you can be eating in five minutes!

Peanut butter mixture in bowl with whisk.

While the noodles boil in a large pot, whisk the peanut butter, soy sauce, sriracha, and maple syrup together in a small bowl.

Ramen with peanut sauce.

Drain the ramen, add it to a small bowl, and pour the peanut butter mixture over the ramen and stir to combine.

Hint: cook the ramen in low-sodium veggie broth instead of water if you want to add a little more flavor.

Substitutions

If you or someone you know struggles with food allergies or other issues here are a few of the most common substitutions to help:

  • Gluten-free – use low-sodium tamari instead of soy sauce to make this recipe gluten-free. Tamari is a “wheat-free” soy sauce.
  • Soy-free – coconut aminos is a great option if you are avoiding soy. It’s also gluten-free and lower in sodium as well.
  • Nut-free – sunflower seed butter or tahini are good alternatives if you have a nut allergy.
  • Low-fat – this is a comfort food and should be enjoyed sparingly even though it is considered WFPB. If you want to lower the fat content simply cut back on the peanut butter or use peanut butter powder like PBfit.
  • Sauce: if you don’t have sriracha you can use sweet chili garlic sauce, chili sauce, or Gochujang.

If you are looking for a ramen recipe on the lighter side, try this vegan ramen by Healthy Vegan Mama. It’s so good!

Spicy Peanut Butter Ramen Variations

You can make this recipe as simple or complex as you like. I’ve listed some of my favorite variations for this recipe:

  • Noodles – if you don’t have ramen, no worries. Try using other alternatives like stir-fry rice noodles, soba noodles, or just regular whole wheat pasta like linguine or spaghetti. Keep in mind the cooking time will change.
  • Tofu – grilled marinated tofu or baked tofu are both excellent additions for extra protein and heartiness to these noodles.
  • Veggies – raw veggies like bell peppers, sliced carrots, and shredded Napa cabbage are great ways to add crunch and vibrance. I also love steamed broccoli and asparagus. But, my new favorite has to be these healthy air fryer mushrooms by Rosa at This Healthy Kitchen. O…M…G 🤯
  • Toppings – chopped peanuts, sesame seeds, fresh cilantro, chopped green onions, and red peppers are just a few of my favorite toppings.
  • Brightness – adding a splash of rice vinegar, apple cider vinegar, lemon juice, or lime to the peanut butter mixture gives the sauce a bit of a tang and a bright depth of flavor.

No ramen? No problem. Check out my spicy Thai peanut spaghetti.

Two bowls of spicy peanut butter ramen.

Storage

Once the Spicy Peanut Butter Ramen Noodles have cooled to room temperature, place the leftovers in an airtight container and store in the fridge for 2-3 days.

Reheat the ramen in the microwave or on the stovetop. You will need to add 2-3 tablespoons of some liquid like water or veggie broth. The peanut sauce will thicken as it sits in the refrigerator.

FAQ

Can I use instant ramen noodles?

You can but why? They suck and provide no healthy value at all. However, if you do choose to use these get rid of the spice packet…you don’t need it.

How do I make this recipe not spicy?

Easy. Leave out the sriracha. Problem solved.

What kind of peanut butter should I use?

Use a natural creamy peanut butter. The only ingredients should be peanuts and maybe a little salt. I like Smucker’s natural.

Ingredients

Units Scale
  • 4 ounces of ramen
  • 2 Tbsp of natural creamy peanut butter
  • 1 Tbsp of sriracha
  • 1 Tbsp low-sodium soy sauce (tamari if gluten-free)
  • 1 Tbsp of pure maple syrup

Toppings (Optional)

  • chopped green onions
  • chopped peanuts
  • red pepper flakes
  • cilantro

Instructions

  1. Bring a large pot of water to a boil over high heat and cook the ramen according to the package instructions (usually 5 minutes).
  2. Prepare the peanut butter sauce by combining the peanut butter, sriracha, soy sauce, and maple syrup in a small bowl and whisking until it forms a smooth paste. Add 2-4 tablespoons of hot water and stir until you get the consistency you desire. I usually add about three tablespoons.
  3. Once the ramen has finished cooking, drain the ramen noodles and return them to the pot. Pour the spicy peanut butter sauce over the ramen noodles and stir until all of the noodles are evenly covered in the sauce.
  4. Divide the spicy peanut butter ramen noodles between two bowls, top with chopped green onions, and chopped peanuts, and serve immediately.

Love using the peanut sauce with veges. Can I use peanut butter powder instead, so it’s no fat?

First recipe of yours I’ve tried but certainly won’t be the last. Absolutely loved it. Got home tonight after a busy day and really tired but I remembered you saying how quick this recipe was. Perfect. I added chilli flakes, a zucchini and a red bell pepper and topped with some sautéed mushrooms. Thank you so much ♥️

Not raining here today, but that really hit the spot!! I did substitute 1T of powdered PB for one of the regular PB to cut down on oil and it’s still delicious, quick and easy!! Made a quick salad to go with it and that’s dinner.

Hi, love your site…This is a great recipe…I am not a fan of the type of ramen with the season packet…it is often fried/ made from white flour…but pasta ..gluten free or not can be substituted as well..I often use a spaghetti.red lentil, or other quinoa and break it in half. This is great with added veggies..brocolli cut in small pieces, peas and grated carrot…then add parsley, green onions, or cilantro…Yummy!

One of our absolute favorites! This is a wonderful marinade for massaged kale! I replace sriracha with 1 teaspoon of Cholula, add 1 & 1/2 T rice vinegar for 1/2 the water and mix it in a measuring cup. I double your sauce and it works great for kale and noodles. Add a little roasted butternut squash, and perfect meal! Thanks Shane!

I didn’t have sriracha, so used sambal oelek (red chili paste), instead. This is great when you just gotta have that simple, saucy spicy noodle fix. Excellent with roasted veggies. Thanks, Shane!

When I say these noodles are SAUCY I mean it. They are delicious, creamy, and can be whipped up in a pinch. I added a little bit of sesame oil which I recommend for a deeper nuttiness. 10/10 (but cut down on the sauce a little bit if you don’t like your noodles really saucy.

Hi, I wanted to make a couple meals for my breaks tomorrow and this looked fast & it was. I don’t usually eat ramen but I will be eating more! My grandkids eat it all the time but with the seasoning in the package. Your recipe is so much better. I didn’t have siracha so I used a maple hot sauce, it’s called The General’s Maple Mayhem and is produced in the U.S. by a veteran owned company. I love the stuff. It was perfect in my ramen. I used Teddie all natural smooth with flaxseed peanut butter. I like it because it only has three ingredients. I noticed other commenters ideas and will try the tofu and broccoli in it as well. Thanks Shane and the others for your ideas.

Excellent! I will definitely be making this recipe again. I used 3 Tbsp of defatted peanut butter powder to reduce the fat content and added all of the suggested toppings to the sauce while cooking the noodles. I served the noodles alongside of steamed veggies. Shane you have done it again with very easy and tasty low-fat meals…

What a fantastic recipe! The spicy peanut sauce hits every note I love in a noodle dish! I used PB2 instead of regular PB to cut down a bit on the fat, and doubled the sauce recipe. Served over buckwheat/rice ramen with steamed broccoli and marinated tofu. I actually cannot wait to make this again!!! Thank you!
