Ingredients

  • 1 15-ounce can low-sodium or no salt added chickpeas (affiliate link), drained and rinsed
  • 1/2 cup nut or seed butter of choice (I prefer peanut or almond)
  • 2 Tbsp rolled oats
  • 1/4 cup maple syrup
  • 1 tsp. vanilla
  • salt to taste
  • 1/2 cup non-dairy chocolate chips

Instructions

  1. Add all ingredients, except for chocolate chips, to a food processor and blend until smooth.
  2. Transfer to a mixing bowl and fold in the chocolate chips until well combined.
  3. Store in an airtight container in the fridge and enjoy a spoonful whenever. You can also roll into vegan cookie dough balls.
