1 3/4cupmashed pumpkin or 15-ounce can of pure pumpkin
1/2cupmaple syrup
1 tsp. vanilla
1/3cupunsweetened applesauce
1/4cupground flaxseed (flax meal)
1 1/2cups organic unbleached flour or whole wheat pastry flour
Pour mixture into a nonstick loaf pan and bake for 40-50 minutes. If you don’t have a nonstick pan, you can line with parchment paper. If you do use a cooking spray, just lightly mist the pan.
The loaf is done when a knife tester is inserted into the center and comes out clean, except for a few chocolate chips.
