Grilled Almond Butter & Strawberry Sandwich

This Grilled Almond Butter and Strawberry Sandwich is a delicious, kid-friendly twist on classic peanut butter and jelly sandwiches. It’s a great afternoon snack and perfect for a quick breakfast or a healthy lunch.

Ingredients

  • 4 pieces of crusty sourdough or whole grain bread
  • 3-4 tablespoons of almond butter or nut butter of choice
  • 8-10 fresh strawberries
  • 2 teaspoons of pure maple syrup
  • Optional: A few fresh basil or mint leaves, chopped

Instructions

  1. Prepare Your Ingredients: Wash and slice the fresh strawberries. Chop a handful of fresh basil or mint leaves and set aside if using.
  2. Assemble the Sandwich: Spread an equal amount of almond butter on all four pieces of bread. Arrange the sliced strawberries on top of the almond butter. Drizzle maple syrup over the top of the berries and sprinkle with chopped mint or basil.
  3. Grill to Perfection: Top with the second slice of bread and gently press down. Heat a large nonstick or cast iron skillet over medium heat. Lightly grill the sandwich on both sides for 3-4 minutes until the bread is golden brown and the almond butter is warm and slightly melted.
  4. Serve and Enjoy: Slice the sandwich in half and serve immediately, or wait until it has cooled to room temperature.

Notes

Be sure to use almond butter with only almonds and a little salt as the ingredients. The same principle applies if you use other types of nut butter.

You can boost this sandwich’s flavor and nutrition by adding some extra extras like chia seeds, banana slices, or flaky sea salt.
