This Grilled Almond Butter and Strawberry Sandwich is a delicious, kid-friendly twist on classic peanut butter and jelly sandwiches. It’s a great afternoon snack and perfect for a quick breakfast or a healthy lunch.

Grilled sandwiches are my “jam.” The very first recipe I posted on Shane & Simple was a Grilled Peanut Butter and jelly Banana Sandwich. And let’s not forget the most amazing vegan grilled cheese EVER!

But this will blow your mind. Ladies and gentlemen, the Grilled Almond Butter & Strawberry Sandwich! Creamy almond butter is smeared between crusty whole grain bread slices and piled high with fresh strawberries.

And just when you thought it couldn’t get any better, it’s drizzled with maple syrup, topped with freshly chopped basil or mint leaves, and grilled to golden brown perfection!

Consider it a kid-friendly almond butter sandwich that adults don’t have to feel embarrassed about eating in public.

If you thought almond butter sandwiches were all the same, wait until you try this bad boy. All I can say is your taste buds will sing my praise. And don’t be surprised if this soon becomes your favorite lunch.

This is truly one of the great recipes of the century, at least I think so, and there are many reasons why you’ll love it. But here are the highlights:

Ingredients you’ll need and substitutions

Creamy almond butter, whole grain bread, fresh and juicy strawberries, and a sprinkle of chopped mint for a refreshing twist combine to create a delicious and nutritious meal perfect for any time of day.

  • Bread: I love sourdough or a good crusty whole grain bread. To make this recipe completely gluten-free, use gluten-free bread.
  • Almond Butter: Be sure to use a brand with only almonds and a little salt as the ingredients. Peanut butter or any other nut butter of choice may be used.
  • Strawberries are a great substitute for jam or jelly in this sandwich. You can also substitute a generous amount of fresh berries of choice.
  • Maple syrup: A light drizzle of maple syrup adds a nice sweetness to the berries. 
  • Basil or Mint: This is completely optional, but I absolutely love the freshness this adds to the sandwich.

How to make Grilled Almond Butter and Strawberry Sandwiches

  1. Prepare Your Ingredients: Wash and slice the fresh strawberries. Chop a handful of basil or mint leaves is using.
  2. Assemble the Sandwich: Spread an equal amount of almond butter on all four pieces of bread. Arrange the sliced strawberries on top of the almond butter. Drizzle maple syrup over the top of the berries and sprinkle with chopped mint or basil.
  3. Grill to Perfection: Top with the second slice of bread and gently press down. Heat a large nonstick or cast iron skillet over medium heat. Lightly grill the sandwich on both sides for 3-4 minutes until the bread is golden brown and the almond butter is warm and slightly melted.
  4. Serve and Enjoy: Slice the sandwich in half and serve immediately, or wait until it has cooled to room temperature.

    I started grilling peanut butter and honey sandwiches years ago because they were so dry and fibrous (made with cinnamon raisin sprouted Ezekial bread) that they were inedible. Buttering and grilling sort of defeats the purpose of a healthier sandwich but OMG, what a serendipitous surprise! They were amazing! And we’ve been doing it ever since.

    this looks so good. How do you get that nice golden crust on the outside of the bread? i didn’t see anything mentioning your putting anything on the bread. Did you? what of bread did you use? it looks tasty!

      I just heat up a good nonstick skillet on medium heat and toast the bread for about 3 minutes on each side. But, I’ll also rotate as well.
