Greetings from Charlotte, N.C. The coronavirus is not as rampant here as in other parts of the country, yet, there is still a lot of concern. Grocery store shelves are void of toilet paper and frozen pizzas. Still trying to figure that one out.
It’s yet to be seen what will happen with the schools. But, fortunately, we homeschool our kids so they won’t miss any time in the “classroom.” They’re super excited as you might imagine. (insert sarcasm here)
However, my oldest daughter came home for spring break from college and they decided to extend that by a week. As well as transition to online classes for possibly the rest of the semester. The fact is we have no clue what is to come over the course of the next several weeks or months.
But, it’s always better to be safe than sorry. So, we’ve been trying to stock up on pantry items “just in case…”
To help, I thought I would include a list of how we’re filling our cabinets. I’ve also included a FREE PRINT OUT of the shopping list for you. This is not meant to be an exhaustive list and I am in no way saying you NEED everything on this list. It is just to help you and give you a few options to make sure you are sustained and prepared for whatever.
Stay safe and keep calm. We’re going to get through it. This best offense is a good defense so take care of yourself and build up your immunities by eating a plant-heavy diet.

Emergency Plant-Based Vegan Pantry Staples
WHOLE GRAINS
- Whole Wheat Flour (regular, pastry, etc.)

We also live in NC, in Graham. I homeschool my 8 children who have been vegetarian all their lives and mostly plant based but we are now vegan and completely plant based. When I have a meal in my mind and go looking for recipes it hasn’t yet failed that your recipes are exactly what I’m looking for. Simple, practical, wholesome, healthy and using all of the ingredients I have and would use. You have made my life so much easier.
I just wanted to thank you and ask when you will be making a cookbook. I have a pinterest board titled s and s to keep all your recipes together but a book would be so much nicer. Especially with your beautiful photography.

Thank you for this emergency pantry list. I have a more than ample supply of staples. What I am having anxiety over are getting to the grocery store for fresh vegetables and fruits. I’m older and dread standing in the long lines and the exposure to so many people and surfaces.
