Avocado-stuffed tomatoes with raisins are a delicious and healthy summer side dish. Made with juicy ripe tomatoes, fresh avocado, raisins, and fresh herbs this recipe is so easy and perfect as a salad, side dish, or appetizer. Vegan, gluten-free, and oil-free!

My favorite tv show is the Andy Griffith Show! And, one of my favorite episodes is called “The Bank Job.” At one point Andy encourages Barney to take his lunch break at the diner and says, “The businessman’s special is a hollowed-out tomato stuffed with avocado and raisins. And it’s gooooood, too.”

I thought, “That does sound good!” So, I went to work creating the recipe. And, guess what – IT’S FREAKING GOOD!!!

It may sound weird. But the juiciness of the tomatoes, the creaminess of the avocados, the sweetness of the raisins, and the savoriness of the fresh herbs come together to create a recipe with so much depth of flavor and texture. It’s just one flavor explosion after another.

If you’re looking for a delicious way to get your fruit and veggies in each day you found it. These avocado-stuffed tomatoes are perfect. Oh, and might I suggest pairing this recipe with my tofu feta cheese or vegan French-style potato salad? Alright, let’s do this!

Ingredients

Tomato, avocado, raisins, and herbs come together and create a fresh and vibrant summer salad that’s so easy to make.

Instructions

These avocado-stuffed tomatoes come together in a matter of minutes. Here’s how you do it:

Cut off the tops of the tomatoes and scoop out the seeds and pulp with a spoon.

Cut the avocados in half and remove the pit. Scoop out the flesh with a spoon and mash.

Add the remaining ingredients and stir until everything is well combined.

Spoon the avocado stuffing mixture inside of the tomatoes.

Place the stuffed tomatoes on a serving plate and garnish with extra parsley, cilantro, or shredded lettuce if desired.

Hint: You can enjoy avocado-stuffed tomatoes right away but I think they’re best after being refrigerated for at least 30 minutes.

Variations

There is so much you can do with this recipe because it’s so versatile. Here are a few ideas for changing up and adding flavor.

  • Fruit – if raisins aren’t your thing try adding a chopped apple, currants, or even prunes.
  • Spices – add chili pepper flakes to imbue heat into the dish or sprinkle with cinnamon for warmth and flavor. Roasted garlic cloves are amazing as well.
  • Fresh herbs – oregano, thyme, ginger, mint, and basil are great options for freshness and variety
  • Deluxe – red onion, diced carrot, celery, black olives, capers, or chopped bell pepper are excellent for crunch. Pine nuts are amazing in this recipe!

Storage

Avocado-stuffed tomatoes are best when consumed fresh or within 2 days of making them. Remember, avocados turn brown fairly quickly so be sure and cover them with plastic wrap and place them in an airtight container before storing them in the fridge.

Ingredients

Scale
  • 4 large tomatoes
  • 2 ripe avocados
  • ¼ cup raisins
  • 2 tablespoons chopped fresh parsley
  • 2 tablespoons chopped fresh cilantro
  • 1 tablespoon lemon juice
  • Salt and black pepper to taste

Instructions

  1. Cut off the tops of the tomatoes and scoop out the seeds and pulp with a spoon. Set the tomato shells aside.
  2. Cut the avocados in half and remove the pit. Scoop out the flesh with a spoon and mash until it’s fairly smooth but still has some chunks for texture.
  3. In a mixing bowl, combine the avocado, raisins, parsley, cilantro, and lemon juice. Mix well.
  4. Season the avocado stuffing mixture with salt and black pepper to taste.
  5. Spoon the avocado mixture into the tomato shells.
  6. Place the stuffed tomatoes on a serving plate and garnish with extra parsley and cilantro, if desired.
  7. Serve immediately, or refrigerate until ready to serve.

Notes

Leftovers can be placed in an airtight container and stored in the refrigerator for 2-3 days. But, this recipe is best enjoyed fresh.
