My inspiration, not that this thing took a whole lot of inspiration, came after breakfast with a friend at a restaurant in Charlotte. It was a “blueberry-infused” quinoa bowl that cost me over TWELVE DOLLARS! And, I had half the ingredients removed so it would be fairly healthy.
So, in order to “stick it to the man”, I went home and made my own. It only took THREE INGREDIENTS! SIX if you add the toppings. The results? Healthier, cheaper, easier, and in my honest opinion, much tastier. Suck it, corporate greed.
Quinoa is a powerful little superfood not often associated with breakfast, but it most certainly should be part of the regular rotation. The most important meal of the day should include one of the most important and powerful foods.

- 1 cup dry quinoa
- 2 cups water
- 2 ripe bananas
- 1 cup frozen blueberriesFor Toppings
- 1 tbsp. maple syrup
- 1 tbsp. chopped pecans
- Unsweetened plant-based milk of choice (almond, soy, etc.)
- Put quinoa, bananas, blueberries and water in a pot and cook according to instructions on quinoa package. Usually about 15-20 minutes
- Serve in a bowl and top with the maple syrup, pecans, & desired amount of unsweetened plant-based milk.
