Blueberry Quinoa Breakfast Bowl

This delicious Blueberry Quinoa Breakfast Bowl is a great way to start the day. Cooked with bananas and topped with maple syrup, pecans, and almond milk. It’s so easy! All you need are 4 ingredients and less than 20 minutes.

My inspiration, not that this thing took a whole lot of inspiration, came after breakfast with a friend at a restaurant in Charlotte. It was a "blueberry-infused" quinoa bowl that cost me over TWELVE DOLLARS! And, I had half the ingredients removed so it would be fairly healthy.

So, in order to “stick it to the man”, I went home and made my own. It only took THREE INGREDIENTS! SIX if you add the toppings. The results? Healthier, cheaper, easier, and in my honest opinion, much tastier. Suck it, corporate greed.

How To Make Blueberry Quinoa

This is one of the easiest recipes.

Simply put the quinoa, bananas, blueberries, and water in a medium saucepan and cook according to instructions on the quinoa package. It usually takes about 15-20 minutes.

Once it is finished cooking top it with maple syrup, pecans, and almond milk. That’s it! A delicious Blueberry Quinoa Breakfast Bowl.

How To Make Blueberry Quinoa In Instant Pot

This delicious one bowl meal is even easier when you use an Instant Pot. Place all the ingredients in an Instant Pot and cook for 2 minutes on high pressure. 

Once Blueberry Quinoa is finished you can let it naturally release or do a manually release the pressure (quick release) when it’s finished. Then, just top with maple syrup, pecans, and almond milk and you’re all set.

Ingredients

  • 1 cup dry quinoa
  • 2 cups of water
  • 2 ripe bananas
  • 1 cup frozen blueberries

Suggested Toppings

  • 1 tbsp. maple syrup
  • 1 tbsp. chopped pecans or walnuts
  • Unsweetened almond milk

Instructions

  1. Place all ingredients in Instant Pot and cook on high pressure for 2 minutes.
  2. Allow to do a natural release, usually about 10 minutes, when cooking is finished and enjoy.

Stovetop Instructions

  1. Put quinoa, bananas, blueberries, and water in a medium saucepan and cook according to instructions on the quinoa package. Usually about 15-20 minutes
  2. Serve in a bowl and top with the maple syrup, pecans, & desired amount of unsweetened plant-based milk.

    I needed something other than oats for breakfast this morning for my guests. HUGE hit! I doubled the recipe and have enough for 3 eaters for 2 days. Two of us are plant based, no oil so we can have a large portion while the other eater is older and not totally plant based yet. Her portion was probably 1/2 – 3/4 cup while our portions were 1 1/2 – 2 cups. Your recipes never disappoint. Thanks, Shane!

    Made this today for breakfast, & it was amazing!!! I topped it with chopped walnuts, a splash of maple syrup & a couple of splashes of unsweetened soy milk. For me, the ripe bananas kind of overpowered the taste of the blueberries, which are my fav, so i’m going to try your suggestion of pears, or maybe just more blueberries. I loved this recipe, and will def make it regularly, and yes, i love my Instapot, it’s my favorite time saving appliance, and so versatile!!!!

    Do you mash the banana or just throw it in the instant pot and the pressure cools it down for you?

      Either way is fine. I usually just throw a whole banana in and mash it once it has cooked.

    I made this on the stove top. I used fresh blueberries instead of frozen. It turned out perfect and super delicious. I did not need to add any of the toppings as it was already sweet enough. Yummmmm, will definitely make it again.

    Hey Shane!

    I have saved this recipe to try in the near future. It sounds Yummy!

    I have a request. Would you please try to size your recipes to be printed to one page when possible? Maybe a small picture by the ingredients’ as there is room for one. I personally LOVE pictures’! It reminds me why I saved the recipe and just how yummy it will look. I am a visual person. I find when I thumb through my printed recipes, I look at the picture first and then I go to the name/ingredients. Remember, “Pictures speak a thousand words!”

    I love the font size you use, but if it will save paper, maybe reduce the size just a bit. Let’s go for one page when possible. I do try to flip my page, when I remember to.

    Recipe has incorrect cooking instructions. I cooked as stated above and the grain was totally uncooked. It should read 2 min at high pressure then allow to natural pressure release.

      Sorry about that. I’ve cooked this many times and so have other people if you read the comments and I’ve never heard of this happening. I did update the instructions a bit, but 2 minutes should be ample.

    Another instant pot question. The recipe says 8 minutes but in the comments you have said both 2 and 8 minutes. Normal quinoa in instant pot takes about 1 minute so 2 minutes sounds about right. Just wanted to clear this up. Thanks and your recipes are amazing. Keep it up.

      I’ve cooked this in an Instant Pot a couple of times. Vent closed, high, and I think for about 2 minutes if I recall.
