    Peaceful Easy Feeling Buddha Bowl

    Here it is! The meal that destroys every excuse you have for not eating plant-based or at least a little healthier. It’s easy, cheap, delicious and healthy. So, no more excuses! It’s time you made this Peaceful Easy Feeling Buddha Bowl.

    You don’t need more than 4 or 5 ingredients and one of those is a bag of frozen veggies. And, time? Maybe 20 minutes. I think you can handle it. This recipe is so easy I almost hate taking credit it for it. I said almost.

    Let’s start with our base – a bowl of rice. How hard was that?

    Here’s a little tip: Always make extra rice so you can throw it in the fridge. It makes this recipe even simpler…if that’s possible.

    Next, all you need to do is preheat your skillet to medium-high and toss in the veggies. Whatever kind you want! It’s up to you.

    And, remember…NO OIL! Frozen vegetables cook just find in a nonstick pan by themselves. Don’t go screwing up your heart, this meal or your cholesterol because of some bull$#!T report about “healthy” oils. Ain’t no such thing.

    Now, dump the veggies on the rice. And, we’re almost done. Yeah, I know – easy. You probably think this is pretty boring. But, WE’RE NOT FINISHED, YET!

    Hopefully, you planned ahead and made my Easy Baked Tofu (20 Minutes!) & Five Minute Peanut Sauce. Why? Because these two things are what make this bowl. The tofu adds a heartiness and savory aspect to the dish. And, the peanut sauce is just…well, it’s peanut sauce. Need I say more?

    Well, that’s it! No big whoop. But, you’re heart and tastebuds will forever be indebted to you.

    Delicious mixed veggies served over rice with baked tofu and topped with a wonderful peanut sauce. This Peaceful Easy Feeling Buddha Bowl is convenient, easy to make, filling, healthy, vegan, and absolutely delicious.

    Ingredients

    Scale
    • 1 cup cooked rice
    • 1 bag stir fry or mixed frozen veggies
    • Shane & Simple Easy Baked Tofu
    • Shane & Simple Five Minute Peanut Dipping Sauce

    Instructions

    1. Place rice into bowl.
    2. Cook veggies according to package and pile on top of rice.
    3. Top with Shane & Simple Easy Baked Tofu and then drizzle with Five Minute Peanut Sauce.
    4. Enjoy!
