How Do You Make Vegan No-Bake Cookies?
The best thing about this vegan no-bake cookie recipe, besides not having to cook, is how fast and simple it all comes together.
First, add the oats to a food processor and blend until you get a somewhat coarse flour. Then add your dates and blend them with the oats until they get chopped into little bits.
Now just toss in the peanut butter, vanilla, unsweetened cocoa powder, maple syrup, almond milk, and process until this awesome cookie dough is formed.
When the cookie dough is ready simply scoop out about 2 tablespoons and form into little cookies. That’s it! Literally, that’s it!

Wonderful healthy, whole food spin on a much loved cookie! Thank you!

Shane, this recipe is divine! I made it as a treat for my daughter who finished a semester of teaching. She is allergic to peanuts, so I used almond butter, and we use soy milk. The taste and texture was perfect. Thanks so much, Shane. Blessings!
★★★★★
These are delish. One mention…I chop the dates before putting in my cuisinart otherwise it bucks the machine like a cowboy on a bull!
★★★★★
Wondering how much oat flour I would use (instead of making it with the oats)
Equal amounts. 1 cup of oats will give you 1 cup of oat flour. Hope this helps!
These were amazingly delicious. I made one batch with peanut butter, and one with almond butter. Both great in their own way. Thank you so much for so many delicious and healthy recipes!
★★★★★
These were delicious! I think next time I would add the nut butter a little at a time as it tended to be a big glob spinning. So nice to have a snack I can eat on whole food plant based oil free lifestyle. Thank you. I want to try your brownies soon

Hi!
These are so yummy! Mine did not stay together as well as they look like they do in the picture. I did not alter any of the recipe. Any thoughts? I will say I wasn’t sure how much a cup of dates was so I cut each date in half and added it in the one cup until it looked like it was full. But maybe I underestimated?
★★★★★
Really good! I used almond butter. Thanks for the recipe!
★★★★★
Do you think peanut butter powder? Could be used?
Yes, absolutely! I’ve used it before and it worked really well.

A Very Expensive Recipe 😂
I love these! I didn’t own a food processor, so I made them in my trusty Blendtec. They were delicious, but they weren’t as smooth and really my Blendtec wasn’t meant for this task. So I finally splurged and bought a high end food processor! So happy I did – but I joke and say it was all because of these cookies. They ARE smoother and much quicker with the right equipment! Tonight we had a Shane & Simple night. Your chick pea, cauliflower and rice casserole and no bake cookies! Yum!

I know the feeling. LOL! I’m so glad you enjoyed them.
These are so good and easy to make!
Shane – although it’s listed in the ingredients list, the cocoa powder isn’t listed in the instructions when adding ingredients to the food processor.
Thank you for all you do!

Oh, good catch. Thank you!!! (and glad you enjoyed the cookies)
Peace,
shane
I cannot emphasize enough to make sure you have pitted the dates. I usually buy pitted dates, but not this time. I accidentally made these cookies with pits! Never occurred to me to check the dates first, as I was in a hurry! Anyway, i am still eating these cookies, just spitting out the tiny pit pieces, lol! Soo, soo good!
thanks again!

Our favorite healthy cookie recipe! These are delicious!

I had to come back and add: I stored mine in the freezer for a ready supply. These are great from frozen with 5 min so or so in the air fryer. Still squidgy in the middle but also warm and firm on the outside. MMmmmmmm
★★★★★
My new favorite treat!! They are so tasty and easy to make. I will never buy them in the store again as these are wwaaaayyyyy better. Thank you!
★★★★★
Thank you!
Oh my god! These are a treat, aren’t they?! Love how easy they are to make. Had to add a bit more ‘milk’ to make it bind, for some reason. They were nommy and sticky and filling. Wow. Another Shane and Simple hit. Thank you 🙂
★★★★
Thank you so much!!!
These are another homerun! Easy healthy AND delicious 💞💞
★★★★★
Thank you!!!
These sound fantastic. Can I leave the salt out or really reduce the amount?
Yes, make it fit your needs.
SOOO Good! Haven’t been disappointed by any of your recipes yet!
★★★★★
Thank you!!!
I’m avoiding grains to the extent possible, and wonder if almond flour might work for these cookies.
Thanks!
I have never tried it but I see no reason why it wouldn’t work.
Only 1 Tablespoon of cocoa? From the picture, I’d have thought there was more…?
I know. But, it goes a long way.
Can you use date “sugar” instead of grinding the dates? I have a wimpy food processor. Any idea on amount?
Hi, Rachelle! The dates are what hold the cookies together. So, I’m not sure there would be enough binding if the dates were to be removed. You could try doubling the maply syrup and that might help. Good luck!
These are so yummy! They saved me from following a craving to the ice cream store, and I genuinely enjoyed them and had no guilt! Thank you for another keeper recipe 🙂
★★★★★
Would you please tell me the brand and where u get the putted dates? Thanks
Hi, Reba. I usually get all my dates at Costco.
I made them today and a hit with my family. My two year old loves it! Thank you for the wonderful recipe.

Wow! All I can say is Double WOW! Man after being on a plant based diet for a week and looking up new recipes I found your website. I have been missing a good dessert. These SATISFY! EASY GUY FOOD! Finally found a easy website to try out different recipes. Thank you Shane!

Roman, thanks so much! Congrats on your new lifestyle. Stick with it…I’m here for you:)
I’ve been craving “no bakes”, which I can buy almost anywhere, here where I live. However, they are not WFPB. These are fabulous!! Thank you so much.
Thank you, Peggy! I’m so glad you enjoyed them.
Made these last night. DELICIOUS!! I’m planning to make a few batches 😁. Can I freeze them?
Thanks for another simple yummy recipe!!
Margaret
Hi, Margatet! So glad you liked the cookies! Yes, they freeze very well.
Can you sub powdered peanut butter to leave out the oil? and how much would this be?
thanks
Absolutely! Just make the PB per the instructions on the powdered container and use equal amounts. Should work just fine.
My first no bake cookie. I knew yours wouldn’t disappoint. Really good, really quick and hit the spot. Thanks!

Fantastic, Shane. Thank you for this recipe. I made two small changes….I don’t like raw oats, so I baked them gently for about 8 minutes. Before I put them in the oven, I put a dab of cherry jam (all fruit) in the center of each one. They were outstanding.
