These things are insane! They’re comforting, crunchy, spicy, and freaking delicious. And, if you got leftover mashed potatoes sitting in the fridge you can be feasting in 5 minutes!

The original recipe was created by one of my heroes and biggest inspirations, Sam The Cooking Guy. I wanted to see if I could make a healthier vegan version. And…I did.
Much like my take on his Potato Chip Tomato Sandwich.
I can not believe how good these things are! But, what’s not to love?
Tacos? Good! Mashed Potatoes? Good! Mashed Potato Tacos? BLOW YOUR MIND AWESOME!
How To Make Mashed Potato Tacos
All you have to do is pile everything up on the tortilla and eat. That’s it!
And, the best part is that it’s a freaking mess. So, if you do somehow manage to screw this up no one will ever know.
No doubt the mashed potatoes are the heart and soul of this dish. But, the way all the ingredients fit so well together is really inspiring.
The crunchiness from the green onions and potato chips add amazing texture and flavor.
And, the combination of Cholula and sour cream is absolutely delicious.

One of the great things about this dish is how super fast and simple it is. Keeping leftovers in the fridge gives you that convenience.

Mashed Potato Tacos! The perfect way not to let leftovers go to waste. Layered with vegan sour cream, hot sauce, crunchy fat-free potato chips, and delicious green onions. It’s Vegan comfort food at its finest!
- Heat a nonstick skillet on medium-high heat and warm the tortillas just until they start to color a bit. Warm the potatoes up in the microwave or on the stove top.
- Evenly spread sour cream on each tortilla.
- Next, add about ¼ cup of mashed potatoes on each tortilla and sprinkle with hot sauce.
- Generously top with chopped green onions.
- Finally, take a good handful of the potato chips and crunch them over each taco.
- Kill it!
