If taste buds had hands they would high five you after one bite of this sandwich! Get ready because we’re about to take southern comfort food to a whole new level. It’s time to make the Potato Chip Tomato Sandwich. Giddy up!
I grew up eating these things on white bread and smeared with mayo. But, I had never seen it with potato chips until my hero, Sam the Cooking Guy, made this on his show a little while back and I became obsessed. I had to figure out a way to make this thing healthy, plant-based, and delicious. Impossible. I think NOT!
My Five Minute Fat-Free Microwave Potato Chips would provide the crunch. The only thing left was coming up with a healthy mayo. I had made sour cream out of cashews. So, why not mayo? A little tweaking and – drum roll please – CASHEW MAYO!
OK, we’re all set so let’s build this thing!
First things first, mayo and lots of it. Spread it real good. Next, add a few slices of tomato; throw on a big handful of chips; and, BOOM! One amazing kick-ass sandwich!
People can make excuses all day long about why they can’t or won’t eat healthy. But, this sandwich destroys any and every excuse out there.
It’s not bad for you, it just looks that way. So, go ahead and pretend you’re being naughty if it makes you feel better. You’ve earned it.

If your taste buds had hands they would high five you after one bite of this potato chip tomato sandwich! It’s super easy to make, healthy, crunchy, creamy and absolutely delicious. Perfect for lunch or a late night snack. Vegan and low-fat.
- 2 slices whole grain bread of choice (I love Dave’s Killer Bread)
- 1 medium ripe tomato
- 2 Tbsp. Creamy Cashew Mayo (or more if desired)
- 1 BIG handful Shane & Simple Five Minute Fat-Free Microwave Potato Chips
- Pinch of salt and pepper
MAKE THE SANDWICH
- Spread desired amount of mayo on each slice of bread
- Add 3 slices of tomato to one slice of bread
- Sprinkle with a little salt and pepper
- Pile a BIG handful of chips on top of tomatoes and place 2nd slice of bread on top
- Press down GENTLY and “squish” everything together
- Cut in half if you prefer and ENJOY!
This recipe was inspired by one of my heroes, Sam The Cooking Guy. He’s not a vegan, but he is an inspiration and the reason I started cooking. I wanted to figure out a way to make this recipe healthy so I added whole grain bread, the cashew mayo and homemade fat-free chips.
