How To Make Vegan Pepper Steak With Onions
This is one of the easiest, and healthiest, vegan pepper steak recipes. It uses very simple ingredients and comes together in less than 30 minutes including prep time.
First, preheat a nonstick skillet over medium heat. While the pan heats up, soak the Butler Soy Curls for 7-8 minutes. Then, drain them and set aside.
Once the pan is ready, add the onions and cook them until they’re slightly brown and soft. This usually takes about 4-5 minutes. Then, toss in the bell peppers let them cook for 2-3 minutes.
While the onions and peppers cook you can prepare the brown sauce and set it aside so it will be ready to go.
Add the low-sodium soy sauce, corn starch, maple syrup, water, onion powder, garlic powder, and ginger to a small bowl. Whisk everything together until it’s well combined.
This brown sauce is super easy to make, but it’s absolutely essential to the recipe. And, delicious!
Now, add in your soy curls to the peppers and onion. Toss everything to make sure it’s mixed together and season with a little salt and pepper. Let it cook for 1-2 minutes.
Finally, pour the brown sauce into the skillet, make sure everything is coated, and stir until the sauce thickens.
That’s it! Delicious Vegan Pepper Steak with Onions. Serve this Vegan pepper steak and rice together for a truly delicious and satisfying meal.

Amazingly simple and flavorful! Thank you!

Hi Shane! I wondered if this recipe would be that great. IT WAS! I didn’t have the green bell pepper, so I used jalapenos with the red. I was tired, didn’t feel like being in the kitchen, and this was quick and DEEEEEELishious. Thank you for another simple, healthy, flavorful meal. You rock!
Lori B.
Made this tonight for myself and had it with rice. So delicious and I love recipes with soy curls. Made it exactly as written and may use leftovers in a tortilla tomorrow. Thanks for another awesome recipe!
Susan
We use this recipe as a fajita/burrito filling and it’s perfect. We add lettuce, tomatoes, and black olives and they are AMAZING!
Christal
This was super easy and so delicious! Will definitely make this on rotation!
Mary
I made this for dinner last night. It is so easy to make & full of flavor. I noticed in the comments that several people said they doubled the Brown Sauce. My hubby likes sauces so I doubled it! It was fabulous & will definitely be made again & again! I think I will add cremini mushrooms next time.😄
Shane Martin
Thank you!
Lauren Vaught
Made this amazingly delicious and simple recipe as the first home cooked dinner in our new home. Lovely, unxious flavors. Thank you for all the goodness you put out there!
Linda Cohen
We love this recipe!!! I make it often, even my non vegan family love it!! Thank you so much!!
Wanted to know if I freeze it, what is the best way to reheat?
Thanks again!!❤️
Darlene Cloud
Wow! Made this recipe tonight and it was delicious! I served it over brown rice but I think it would be great on its own as well. My husband even had seconds! This one is going into our regular rotation for sure! So tasty! Thank you for posting this!
Connie Crescenze
Just made this. Easy, quick, delicious—love it and my non-vegan hubby likes it too! First time using soy curls and pretty excited about trying your other soy curl recipes too. (They now carry them at MOMS Organic Market in the bulk section—yay!) Will definitely make this again. Thanks again for all you do and your terrific recipes, Shane—much appreciated!!
Moni
My husband loved this one!
Debbie
I made this last night for dinner and served it over brown rice. It was delicious! We used a little Mae Ploy Sweet Chili Sauce as a condiment which was really good. I also think next time I make it, and there WILL be a next time, 🙂 I am going to add some pineapple tidbits and use some of the juice (in it’s own juice, no added sugar) from the can to make the sauce instead of water. I think it will be even more amazing with that little bit of fruit in it. Thanks for sharing your delicious recipes!
Eva
I’m sure I’ve already commented but since I made it again tonight, I just wanted to say again thank you. This is such a great weeknight meal. I’m so appreciative of all your recipes!!
Shane Martin
Eva, you are welcome to say it as many times as you would like. LOL! Thank you!!!
Sue
Great recipe! Freezes very well too! Great over any grain and even Chinese noodles! Love it! Thanks!
Traci S
Made this recipe several times. Each time I am amazed how quick, easy, and delicious it is. Definitely a favorite and on rotation. Love this site. Thanks, Shane!
Vickie
This recipe has become a new favorite, for sure! My husband and I have never been a fan of onions and peppers, for one thing. But I tried this recipe, and we absolutely love it! And couldn’t be simpler. A quick and easy meal, and it tastes like I spent a lot of time on it. Thank you, Shane!
MKinTX
So yummy! My meat-loving husband called it scrumptious. 🙂 I threw in the whole bag of soy curls (8 oz). I added an extra bell pepper (total of 3), went heavy-handed on the black pepper and doubled the sauce. I even threw in a little (about a couple tbs or so) of chopped hungarian wax pepper for a little spice. It was sooooo good! Looking forward to left-over for lunch tomorrow. Thanks, Shane!
Sunny
This is so quick and easy and delicious. I’ve made it at least 3 times now; also subbed steamed tempeh once, I think, and maybe added chickpeas that time. Your cooking sauces are so helpful, and reliably tasty! I see one person thought of adding pineapple chunks; sounds good to me, I’ll try it. But it’s terrific (and so reliably quick) just the way it is. Thank you, Shane. Lifesaver on a busy day. 🙂
Jana Singer
Yum! Double the sauce!!!!
Carol
Sounds yummy !! Wonder if this would be good with no-sugar-added pineapple chunks added…. or would the flavors not be ok together?
Shane Martin
I don’t see why it wouldn’t work. I live by the premise anything’s worth trying…at least once. LOL!
Gabrielle Ottavio
Excellent, quick and easy! Added broccoli florets and Kale that I needed to use up. Served over leftover quinoa. Delicious ❤️
Jen
Just made this recipe last night on top of brown rice. It was excellent! My husband wants this on the regular menu from now on. Had leftovers for lunch the next day wrapped in a whole wheat tortilla with some aioli on top! Another great meal! Thanks for such a great tasting recipe. Easy to make and quick! Keep the great recipes coming 😁
Shane Martin
Wow, that’s awesome, Jen! Thanks so much for reaching out. Blessings.
Ann-Marie
This is a new family fav!! Just made it for the first time the other night and it was a hit. I never cooked with soy curls before and really liked the texture of them. My daughter thought it was chicken haha. I love your recipes. So simple and easy and flavorful. Thanks so much for sharing!!
Judi
Made this, (and so many of your other recipes), and it was gone before I could ask how the family liked it! Love your recipes and tips! Thanks so much for sharing your knowledge!
Keri Mager
we made this and loved it!
Shane Martin
Awesome!!! Thank you!
Trish
Have tried to get Soy Curls in Australia but no success. Would you know an equivalent product. Thanks for your wonderful recipes.
Shane Martin
There’s not an equivalent product. Possibly try amazon.
Joanie
Very good! I’ll definitely make this again. Thanks for sharing!
Gloria
Shane,
This recipe is a keeper for me. I made it for lunch today and now I wished I would have cooked rice with it. It is fabulous alone too. Thanks again for another great recipe.
Sheila
I made this last night for dinner. It was delicious. I added some steamed broccoli for color and crunch. Served with basmati rice. I wanted more sauce, so I added some vegetable stock. Leftovers for lunch today were even tastier. This is a keeper. Thanks.
Shane Martin
AMAZING!!!
Sara
Absolutely delicious!! So fast and easy. This s my first experience with soy curls and I am HOOKED. I, too, are almost the whole recipe myself. I’ll be on the lookout for more of your recipes using these tasty little morsels. Thank you!!
Shane Martin
Sara, thank you so much!!!
Melanie
Very easy and very tasty. I air-fried the soy curls before adding to the peppers and onions. I liked this better than regular pepper steak! Thanks, Shane.
Shellie
Fantastic recipe. I served it over farro. This will be a regular. Thanks, Shane.
Andy
We loved this! I doubled the recipe to cover two nights and very good I did! It turned out to be a bit much for my large pan, but the flavor was great and we served it as the filling for fajitas. It tasted just like the chicken fajitas I used to make before giving up meat. This is the second time in a week you’ve helped with our dinner plans! Also thank you for introducing me to soy curls which I can think of lots of ways to use.
Vivian
This is an excellent recipe. The leftovers aren’t nearly as good the next day, so don’t expect it to be. But freshly made, it’s delicious! The sauce is boss!
Elaine Lynch
I just LOVE this recipe….have made it several times. So easy and fast. I too doubled the sauce, served it over rice and one time I threw in a package of “Seeds of Change” quinoa & brown rice when it was finished…which made it even easier. Yum! Thank you.
Shane Martin
Thank you so much!!!
Jcb
I finally made this and my husband and I loved it. Thanks much!
Shane Martin
Excellent!
Lindsay
Wow!! Soy curls… who knew?? These are amazing! This recipe is SO GOOD!!! Thanks for another keeper Shane!
Suzanne
This was a winner for us. Been plant-based since February 2020, and I comb the internet for recipes that both hubby and I like. This one was spot on. And it was so easy with minimal cleanup. It will be a regular for us. Maybe you could come up with a few more stir fries with soy curls. Thank you for your recipes
Dulce
Does this recipe freeze well? I was planning on doubling the recipe and freezing the leftovers 🙂
Shane Martin
Store the leftovers in a freezer bag. Just be sure to squeeze out as much air as possible to prevent freezer burn.
sandy
I did not want to leave the house today so i searched “bell peppers” and “soy curls” on google and boy am I ever glad I found this recipe! Absolutely delicious. I will be scheduling this one in for twice a month. Super easy and tastes amazing! Thank you. I love strangers who post cool stuff on the internet and make my life flavourful and more interesting. Bless you!
Janice
This is so yummy! One of my favorite dishes now.
Shane Martin
Thank you, Janice! Soy curls are probably the most amazing thing in the world:)
Deb
Made recipe as written. This was easy and delicious. Thank you for sharing!!
Maureen
Hi there. I just got a hold of some soy curls and made your vegan pepper steak with onions, instant pot brown rice, I cooked peas on the side . Delicious. I also made chocolate peanut butter dessert hummus and had wedges of apples, bananas, and peaches. What a delicious satisfying meal. Thank you.👍 😊 They’re all five stars.
Paulette
Made this tonight for my non vegan boyfriend. His comment was, it was better than he expected. As for me, I’ve had a 3 lb bag of soy curls in my cupboard for a few months so this was my first time trying them as well. Thank you for such a simple and delicious recipe for our first soy curl experience!
Jetta
It says on the side of the package that its best to freeze or put in fridge, I freeze my soy curls if i know that I wont use them right away to keep them fresh.
Willie
I’m from Europe and ordering a bag of those soy curls cost me, with shipping about 87 dollars. A bit expensive for a humble meal.
So is there another way to make this meal? We have regular tofu, but I’ve never seen firm tofu or extra firm tofu if that is what you would suggest.
sandy
maybe you can order a bulk box of it instead of a small package. That’s what I do. It will still cost you more but less than buying multiple single packages. The bulk box has lasted me a year at least. Still taste just fine!
Annette Garver
This is one of my FAVORITES – I actually had it four nights in a row a couple of weeks ago!
April T
Delicious!!
Carol G
OUTSTANDING!!! 1x recipe serves 4. Not so sure I was happy to catch that as I was about to polish off the entire pot myself. (Maybe it’s a “Carol” thing, as I see from the post above!). But I live alone, and it’s that delicious, so who’ll know …
Thank you!
Shane Martin
Exactly. “Serves 4” is merely a “suggestion.” LOL! Thank you, Carol! Blessings.
Carol
Just polished off my first helping and going back for seconds! Thanks for another winner, Shane!
Shane Martin
That’s awesome, Carol! So glad you enjoyed it…and enjoyed it:) Merry Christmas!
Michelle
Just made it. Didn’t start the rice first and now have to wait! Yum.
Shane Martin
Hi, Michelle! Good things come to those who wait:) Blessings.
Teri
This recipe is DELICIOUS! It is now one of my “go to” recipes. Took it to a pot luck and everyone loved it. I think it was even one of the favorites!
Pamela
I LOVE this dish!!!! I doubled the sauce recipe and I threw the soy curls in the air fryer for a few minutes after soaking and squeezing to give them a bit more “tooth.” So delicious, and it gets even better the next day. Also makes a great sandwich filling.
Shane Martin
Awww, no you di’int! Pamela, that sounds amazing! Thanks for reaching out and rating the recipe and sharing your ideas. I LOVE IT! Can’t wait to try the sandwich:) Blessings.
Sarah
I made a double batch for my family last night. We are not vegan, but are choosing more plant-based options more often. Even my little omnivores loved this dish! My middle guy said it tastes just like the black pepper chicken from Panda Express…. only way better! Thank you!!!
Shane Martin
Wow, Sarah! That is so great and makes me happy. I love to hear things like this especially when the little ones dig in:) Thanks again, Sarah. It’s hearing things like this that let me know what I do is helping and worth it. Blessings to you and your family. ~Shane
Trish
Got my soy curls in this afternoon and doubled the recipe. So quick to bring together and absolutely delish!! My husband who isn’t a fan of soy-anything, totally loved the meal. Thanks so much for a great recipe!
Shane Martin
Wow, Trish! That is so awesome and so glad you all liked the recipe! Thanks for rating it and reaching out. Many blessing to you and yours.
Lea
I have never used soy curls, what’s up with them? Did they give the dish a meaty texture?
Shane Martin
Lea, yes. They’re all the rage with the cool kids. LOL! They’re whole soybeans that are boiled and then dried. Once rehydrated that have the consistency of chicken. They adapt to whatever you’re cooking. Great source of protein as well. We LOVE them!
Wendy
I just made a double batch of this today. It was delicious! Thanks for the recipe.
Shane Martin
Wendy, thanks so much! It’s one of our faves in this house. Soy curls RULE! Rock on.
Trish
Ordered soy curls. Arriving Monday and will make this then. Looks delicious! I wish I could find soy curls in stores!
Shane Martin
I hear ya, Trish! We order ours as well. Hopefully, they’ll be more accessible in the future. Hope you enjoy the vegan pepper steak.
Rhoda
Can’t wait to try this one!
Shane Martin
Awesome! Hope you enjoy it. It’s one of our faves. Blessings.
Anne Henderson
We made this last night and it is so easy to make and absolutely delicious! Who knew that soy curls (that name! LOL) could be amazingly good! Thankful for this website and your encouragement; plant based eating isn’t the easiest to navigate. By the way, our daughter, Whitney Henderson, told us about your website and gave us our first bag of soy curls!!
Shane Martin
Wow, Anne! That is awesome!!! Whitney if one of my favorite people in the whole world:)
Shane Martin
Easy, quick, healthy, and delicious!
