How To Make Vegan Pepper Steak With Onions

This is one of the easiest, and healthiest, vegan pepper steak recipes. It uses very simple ingredients and comes together in less than 30 minutes including prep time.

First, preheat a nonstick skillet over medium heat. While the pan heats up, soak the Butler Soy Curls for 7-8 minutes. Then, drain them and set aside.

Once the pan is ready, add the onions and cook them until they’re slightly brown and soft. This usually takes about 4-5 minutes. Then, toss in the bell peppers let them cook for 2-3 minutes.

While the onions and peppers cook you can prepare the brown sauce and set it aside so it will be ready to go.

Add the low-sodium soy sauce, corn starch, maple syrup, water, onion powder, garlic powder, and ginger to a small bowl. Whisk everything together until it’s well combined.

This brown sauce is super easy to make, but it’s absolutely essential to the recipe. And, delicious!

Now, add in your soy curls to the peppers and onion. Toss everything to make sure it’s mixed together and season with a little salt and pepper. Let it cook for 1-2 minutes.

Finally, pour the brown sauce into the skillet, make sure everything is coated, and stir until the sauce thickens.

That’s it! Delicious Vegan Pepper Steak with Onions. Serve this Vegan pepper steak and rice together for a truly delicious and satisfying meal.

Ingredients

Scale

For the Pepper Steak

  • ½ an 8-ounce bag of Butler Soy Curls
  • 1 large onion sliced
  • 1 green bell pepper sliced into medium strips
  • 1 red bell pepper sliced into medium strips
  • 1 tsp. black pepper
  • 2–3 Tbsp. of water for cooking, if necessary
  • Salt to taste

For The Sauce

  • ¼ cup of low-sodium soy sauce (use tamari to make gluten-free)
  • 1 Tbsp. cornstarch
  • 1 Tbsp. maple syrup
  • ½ cup of water
  • 1 tsp. of onion powder
  • 1 tsp. of garlic powder
  • ¼ tsp. ground ginger

Instructions

  1. Preheat a nonstick skillet on a medium heat.
  2. Place the soy curls in a bowl and cover with water for 8 minutes. While the soy curls are soaking in the water slice the bell peppers and onion.
  3. Once the pan is completely heated add the onions and cook them until they are soft and begin to slightly brown. Add 1-2 Tbsp. of the water, if needed, to prevent them from sticking. Add the bell peppers, mix with onions, and cook for 1-2 minutes.
  4. Assemble the brown sauce while the peppers and onion cook and set aside.
  5. Drain the soy curls, add them to the skillet with the peppers and onion, and toss to combine everything. Season with the black pepper and salt. Cook for 1-2 minutes.
  6. Pour the brown sauce into the skillet, make sure everything is coated, and stir until the sauce thickens.
  7. Serve hot over rice or enjoy by itself.

I wish I could give this recipe more than 5 stars because it deserves more. This is a new favorite and I’ll be making it frequently!

I have jumped on the “Lego” lunch bandwagon and this dish freezes perfectly in my silicone molds and when thawed and reheated it tastes freshly made.

Love , love, love this dish!

Delisch! I did add 1 1/4 tsp Annie’s vegan Worchestershire sauce and about 5 cloves of garlic sliced very thin. I had yellow and orange bell peppers so I added chopped parsley at end for added color. Another winner Shane! Thank you.

Hi Shane! I wondered if this recipe would be that great. IT WAS! I didn’t have the green bell pepper, so I used jalapenos with the red. I was tired, didn’t feel like being in the kitchen, and this was quick and DEEEEEELishious. Thank you for another simple, healthy, flavorful meal. You rock!

I made this last night for dinner and served it over brown rice. It was delicious! We used a little Mae Ploy Sweet Chili Sauce as a condiment which was really good. I also think next time I make it, and there WILL be a next time, 🙂 I am going to add some pineapple tidbits and use some of the juice (in it’s own juice, no added sugar) from the can to make the sauce instead of water. I think it will be even more amazing with that little bit of fruit in it. Thanks for sharing your delicious recipes!

So yummy! My meat-loving husband called it scrumptious. 🙂 I threw in the whole bag of soy curls (8 oz). I added an extra bell pepper (total of 3), went heavy-handed on the black pepper and doubled the sauce. I even threw in a little (about a couple tbs or so) of chopped hungarian wax pepper for a little spice. It was sooooo good! Looking forward to left-over for lunch tomorrow. Thanks, Shane!

This is so quick and easy and delicious. I’ve made it at least 3 times now; also subbed steamed tempeh once, I think, and maybe added chickpeas that time. Your cooking sauces are so helpful, and reliably tasty! I see one person thought of adding pineapple chunks; sounds good to me, I’ll try it. But it’s terrific (and so reliably quick) just the way it is. Thank you, Shane. Lifesaver on a busy day. 🙂

It tasted just like the chicken fajitas I used to make before giving up meat. This is the second time in a week you’ve helped with our dinner plans! Also thank you for introducing me to soy curls which I can think of lots of ways to use.

I’m from Europe and ordering a bag of those soy curls cost me, with shipping about 87 dollars. A bit expensive for a humble meal.
So is there another way to make this meal? We have regular tofu, but I’ve never seen firm tofu or extra firm tofu if that is what you would suggest.

maybe you can order a bulk box of it instead of a small package. That’s what I do. It will still cost you more but less than buying multiple single packages. The bulk box has lasted me a year at least. Still taste just fine!

Got my soy curls in this afternoon and doubled the recipe. So quick to bring together and absolutely delish!! My husband who isn’t a fan of soy-anything, totally loved the meal. Thanks so much for a great recipe!

I have never used soy curls, what’s up with them? Did they give the dish a meaty texture?

Lea, yes. They’re all the rage with the cool kids. LOL! They’re whole soybeans that are boiled and then dried. Once rehydrated that have the consistency of chicken. They adapt to whatever you’re cooking. Great source of protein as well. We LOVE them!

We made this last night and it is so easy to make and absolutely delicious! Who knew that soy curls (that name! LOL) could be amazingly good! Thankful for this website and your encouragement; plant based eating isn’t the easiest to navigate. By the way, our daughter, Whitney Henderson, told us about your website and gave us our first bag of soy curls!!
