Summer is right around the corner and a simple sandwich recipe like this avocado tomato and basil sandwich is perfect for the season. It’s oil-free, vegan, and absolutely delicious!
This recipe was inspired by two things: one of my favorite vegan restaurants in Charlotte, Living Kitchen, and pesto. Living Kitchen had a basil avocado sandwich that was simply divine. And, pesto is, well, pesto.
I simplified the sandwich, left out the pesto, and just like that, a star was born, err, an avocado tomato and basil sandwich was born. But, once you try it I’m pretty sure you’ll feel this sandwich should be famous.
What’s not to love? It’s creamy from the avocado; thick and juicy because of the tomatoes; and, super fresh with the basil.

How to make an avocado tomato and basil sandwich
This avocado, tomato, and basil sandwich is not only delicious but super simple to make. A great source of healthy fats, vitamins, and fiber, it’s a perfect meal for a busy day or a quick lunch break.
Cut the avocado in half and remove the pit. Scoop out the flesh into a small bowl and mash it with a fork. Season with salt and pepper to taste.
Spread the mashed avocado on one slice of bread.
Layer the fresh basil and tomato slices on top of the avocado.
Cover with the other slice of bread, make a sandwich, and enjoy!
Hint: Avocados can brown quickly, so if you’re making this sandwich ahead of time, brush a little lemon juice on the avocado to prevent it from turning brown.
Substitutions
A few suggestions for substitutions if you absolutely must:
- Lettuce – instead of basil, you can use romaine lettuce, spinach, kale, or Swiss chard.
- Bread – use gluten-free bread instead or turn it into lettuce wraps to make this recipe gluten-free
- Avocado – replace the avocado with oil-free hummus if you wish to lower the fat content.

Tomato avocado and basil sandwich variations
This avocado tomato and basil sandwich may appear simple but it’s also very versatile. You can enhance the flavor in any number of ways. Here are just a few suggestions:
- Sauce: lemon juice, balsamic vinegar, cashew mayo, or balsamic glaze are excellent spreads and drizzles for this sandwich.
- Spicy – sprinkle some red pepper flakes over the mashed avocado or sprinkle in a dash of sriracha to add a little heat
- Seasoning – seasoning with spices and herbs is a great way to add flavor and depth to this sandwich. Try flavoring the guacamole with garlic powder, onion powder, oregano, parsley, thyme, rosemary, chili powder, paprika, or any other flavor options that strike your fancy. But, most of the time just a pinch of sea salt and black pepper do the trick.
- Mozzarella: if you want an incredibly magical experience top this sandwich with some of my vegan mozzarella. It’s like a Caprese salad between two pieces of bread. I can’t even…
- Texture – add in some of my vegan bacon bits or Italian sausage crumbles for a little crunch and even more flavor.
- Grill: if you are a fan of a grilled cheese sandwich simply heat up a nonstick pan over medium heat and toast both sides of the bread. Easy peasy!

Avocado tomato and basil sandwich storage
Unless you are planning on making this sandwich the night before in order to have lunch the next day, it does not store well at all. The sandwich will eventually get turn soggy so don’t let it sit too terribly long.
And, I’m sure I don’t even need to say this but YOU CAN NOT FREEZE IT!

Ingredients
- 1 large ripe avocado
- 1 large tomato, sliced
- Fresh basil leaves
- Optional: lemon juice or balsamic vinegar for drizzling
- 4 slices of whole-grain bread
Instructions
- Toast the bread, if you wish, to your liking, but it’s delicious as a cold sandwich.
- Cut the avocado in half and remove the pit. Scoop out the flesh and mash it in a small bowl with a fork. Add salt and pepper to taste.
- Slice the tomato into thin rounds.
- Wash and dry the basil leaves, and set them aside.
- Spread the mashed avocado on one slice of toast.
- Place the tomato slices on top of the avocado.
- Add a few basil leaves on top of the tomato slices.
- If you like, you can add a drizzle of lemon juice or balsamic vinegar on top of the basil leaves.
- Cover with the other slice of bread.
- Cut the sandwich in half and enjoy!
