Ingredients for Vegan Chipotle Sauce
This Vegan Chipotle Aioli takes mere minutes to make and requires very simple ingredients. Here’s what you need…
- Raw Cashews: Be sure and use the ones that have not been roasted or salted.
- Unsweetened Almond Milk: This is just what I keep on hand. You can use soy or any other plant-milk you prefer. Just remember to make sure it’s unsweetened.
- Chipotle Peppers In Adobo Sauce: This is the magic ingredient. You will find these pepper by the Mexican food in your local grocery. They’re smoky and have a bit of a kick. But, it’s a good burn. Yeah, baby!
- Lemon Juice: I prefer to use real lemons. But, if you buy bottled lemon juice, make sure the only ingredient is LEMON JUICE!
- Apple Cider Vinegar: Any brand is fine.
- Maple Syrup: Be sure and use pure maple syrup. I love how the sweetness offsets the heat just a bit. But, you can choose to leave this out if you wish.

Try sprinkling a little smoked paprika on top to add an extra layer of flavor.

I just made this aïoli sauce and it is A-mazing! So super easy and really really can’t tell the difference (other than I know it’s much healthier) then it’s mayo alternative. This is going on my regular rotation. I could eat it by the spoonful! But I won’t … maybe LOL

Wow! Sounds amazing. Thanks for sharing.
Made this right away, soon as I saw your post – as my husband loves anything spicy. It turned out tasty, creamy and just the right consistency. He loved it! We’ll put it on enchiladas tonight. Thank you for another great recipe!

Have you tried it with white beans instead of cashews? Having a hard time getting raw cashews right now.
Thank you
I haven’t, but white beans are a popular sub for things like this.
where do you buy the chipotle in adobe sauce??? Is it pretty common ?
Chipotle in adobo sauce is usually in the Mexican food isle of the grocery store. It typically comes in a small can. It’s a very common ingredient. Hope that helps.
