Before we dive into this great recipe, I feel I must talk about the different types of tofu available in most grocery stores. I’m convinced 99% of people who are tofu haters do it wrong. It’s almost always a user error!
Understanding these differences is crucial for getting the best results.
Silken tofu has a smooth, custard-like consistency and is perfect for smoothies. But it’s also excellent for desserts and creamy sauces like sour cream and vegan mayonnaise. However, it’s too delicate for baking.
Regular tofu comes in several firmness levels:
- Firm tofu
- Extra firm tofu
- Super firm tofu
For this easy baked tofu recipe, you’ll want to use either firm, extra-firm tofu, or super firm tofu. These varieties have less water content and provide a firmer texture that holds up well during baking.

Super easy baked tofu and it comes out perfectly every time! I used smoked paprika instead of liquid smoke and I added a bit of maple sugar, then marinated overnight just to soak up flavors even more. I have made this with less of everything when I don’t need so much baked tofu on hand, but a full batch will give me flavorful tofu to toss on salads, make sandwiches, tofu fajitas, added to pasta (the variations are endless!) for days. Thanks so much for a tasty and easy recipe.
The recipe says to slice the pressed tofu into 8 pieces but doesn’t say to whether to slice lengthwise, crosswise or depthwise. The accompanying picture shows slices that would yield no more than 2 slices/block — slicing the the tofu by along its depth — and would require more blocks of tofu. It probably only makes a difference in the timing of the bake, but can you be more specific about how you slice the block for oven baking at the stated time?
Recipe says 8 to 12 pieces, and the picture shows 12. It’s easy to see how he cut it to get 12 pieces.
This tofu is delicious; the liquid smoke adds just the right touch. I see this with a mushroom gravy or in sandwiches. Perfect. Part of my weekly meal prep.

Tofu was very good. Made this last night, taste was great but I can never seem to get my baked tofu crispy on the outside. I followed recipe except the liquid smoke and even baked with a coating of cornstarch for 20 mins on each side until it was nice and brown. I will make this again, hopefully I can get it right. 🙂

Made this with pumpfu instead of tofu and it was very good.
Unlike tofu, pumpfu doesn’t need pressing. I marinated it overnight because it saved time day of baking.
