It’s Friday night and everyone is asleep. Suddenly, a grumble in the tummy is telling you it’s time to raid the pantry. A hot homemade batch of pancakes would really hit the spot. But, that requires too much effort. Right?

Wrong! Now, you can have delicious vegan pancakes in your mouth in mere minutes with this simple whole-grain pancake recipe mix. And, it’s a better and healthier option than any crap you’d find in a box sitting on a grocery store shelf.

This wholesome mix makes pancakes that are hearty, fluffy, and absolutely delicious! In just 5 minutes with only 6 ingredients, you can rest easy know you’ll have pancakes for many Saturday mornings, or late-night cravings, for the foreseeable future. And, even enough to share with the whole family.

Whole Grain Pancake Mix Ingredients

This pancake mix is super simple and uses wholesome ingredients probably already sitting in your pantry.

Precise measurements and procedures can be found in the recipe card below.

  • Flour: whole wheat pastry flour is my preference because it’s light and makes great baked goods. But, you could also use regular whole wheat flour or white whole wheat flour if you prefer.
  • Oats: old-fashioned rolled oats add texture and make these pancakes very hearty, filling, and a great source of fiber. You’ll hardly know they’re in there.
  • Sweetener: I used organic cane sugar but date sugar or maple sugar works just as well. You could also leave it out if you prefer more savory pancakes.
  • Baking Powder: super important for lift and is what makes the pancakes rise. Don’t make pancakes without it!
  • Spice: a little touch of cinnamon adds a nice essence of flavor to this mix. You could also get creative and add your own preference of flavor.

How To Make Whole Grain Pancake Mix

You won’t believe how easy it is to throw this recipe together. And, furthermore, you’ll be even more amazed at the delicious pancakes the mix produces.

  1. To a large bowl add all of the pancake mix ingredients and whisk until everything is well combined.
  2. Store pancake mix in a large glass jar or airtight container at room temperature for up to 1-2 months, or indefinitely in the fridge or freezer.

That’s it! Now, how do we make the actual pancakes? It’s almost as easy as making the mix. Let me show you!

How To Make Whole Wheat Pancakes

Turning this simple mix into some of the most delicious vegan pancakes is super simple.

FYI, one batch will make roughly 5-6 pancakes.

  1. Preheat a nonstick skillet over medium heat.
  2. Add 1 cup of mix to a large bowl, pour ¾ cup of vegan buttermilk, and 1 teaspoon of vanilla into the center of the pancake mix. Whisk the dry ingredients and wet ingredients together until everything is well combined. Set the batter aside and let it sit for 5 minutes. It will be slightly thick.
  3. Once the skillet is ready pour ⅓ cup of the pancake batter into the pan. Cook for about 1 or until the edges brown slightly and the top starts showing small bubbles. Flip and cook for 30 seconds – 1 minute.

Done! Pancakes are ready.

Tips

  • This vegan whole-grain pancake mix makes a great gift. Just pour it in a cool mason jar, slap a label, and Merry Friggin’ Christmas!
  • For light and fluffy pancakes be sure and let the batter rest for at least 5 minutes. It gives the baking powder time to react with the vinegar in the vegan buttermilk.
  • Serve with pure maple syrup, strawberry chia jam, peanut butter, or healthy blueberry compote.
  • For gluten-free pancake mix replace the whole wheat flour with fine oat flour.
  • Some delicious add-in options are vegan chocolate chips, chopped walnuts, or blueberries.
  • If you prefer thinner pancakes use 1 full cup of vegan buttermilk.

Storage

  • Store dry pancake mix in a sealed container on your shelf for 1-2 months. You can store it indefinitely in the fridge.
  • You can store any leftover pancakes in an airtight container in the refrigerator for 3 days.

    Hi Shane! Before I make this pancake mix, could you please clarify its shelf life? I’m a little confused, as in the recipe box it is stated:
    “Store pancake mix in a large glass jar or airtight container at room temperature for up to 3 weeks, or indefinitely in the fridge or freezer.”

    Elsewhere it is stated:
    “Store dry pancake mix in a sealed container on your shelf for 1-2 months. You can store it indefinitely in the fridge.

    With an asterisk! I made this a few times as pancakes, even though I’m not a big fan of pancakes. Then I started making Belgian waffles with this recipe and they are out of this world! Since I first made them two weeks ago, I have had them three other times. If I put on weight this year it will be due to these magnificent waffles. Bet you can’ eat just one!

    I made this mix this morning and then made the one batch. Loved it and especially love that I can customize how much I make. I really only need about 6 pancakes as I’m cooking for just myself. This was perfect.

    I would love to see a buttermilk recipe for just the 3/4 cup. I’m assuming I could use 3/4 of a cup of plant milk and then 2 TB of apple cider vinegar? I just don’t know what I’m going to do with the left over 1/4 cup of butter milk.
