It’s time for Fall recipes y’all and seasonal recipes are my favorite. Not so much because of the food, although that’s a big part of it, more so because of the atmosphere they create.
Is there anything better than the heavenly aroma of pumpkin and cinnamon filling the house?
So, when I started planning my list of seasonal recipes I realized I had yet to post a classic french toast recipe. I do have a delicious vegan french toast casserole and mixed berry french toast bake. But, it’s just not the same.
There’s just something about thick slices of bread covered in sweet custard and cooked until golden brown. Could it get any better? Yes – VEGAN PUMPKIN FRENCH TOAST! That’s how it gets better.
This recipe is so simple and the pumpkin purée is an excellent replacement for the egg and milk found in french toast. It’s the perfect base and creates such a rich, velvety, custardy, and delicious french toast batter. You’ll have a hard time convincing others, and yourself, it’s actually vegan.
If you love cozy breakfasts on crisp mornings this vegan pumpkin french toast is perfect. It cooks up warm and moist on the inside, is lightly crisp and golden on the outside, and is filled with warm autumn spices.

Ingredients You’ll Need
Here’s everything you are going to need for making this delicious pumpkin french toast.
- unsweetened non dairy milk (oat milk, almond milk, or soy milk)
- pumpkin puree, fresh or canned (not pumpkin pie mix)
- tapioca flour, arrowroot flour, or cornstarch
- pure maple syrup
- pure vanilla extract
- homemade diy pumpkin pie spice
- thick slices of firm rustic whole grain bread

How To Make Vegan Pumpkin French Toast
- Whisk the non-dairy milk, pumpkin, tapioca flour, maple syrup, vanilla, and pumpkin spice together in a large bowl until well combined. Then pour the milk mixture into a large shallow bowl big enough so that the bread will fit.
- Preheat a large nonstick skillet over medium heat.
- Whisk the pumpkin mixture once more to make sure everything is combined and dip each side of the bread until it’s evenly coated. Place the bread in the pan, cook for 2-3 minutes, flip the bread and cook for 2-3 more minutes. Be patient with this part of the process. If you try and flip too early the bread will stick.
- Serve and enjoy!

- Thick and hearty bread is a must. French bread, sourdough, whole-grain ciabatta, or a nice hearty rustic loaf that’s not yet been sliced yields great results. Regular fresh bread will give you mushy french toast and won’t cook up as well.
- Don’t use fresh bread. Mildly stale bread works best and will give you a much better result. Simply place a loaf of bread on a baking sheet and let it sit out overnight until the next morning.
- Use a good nonstick pan and let it completely heat over medium-low to medium heat. The biggest mistake people often make is cooking before the pan is ready.
- If you want to make this dish gluten-free simply use your favorite gluten free bread.
Storage
This vegan pumpkin french toast is ALWAYS best when served right away, but you can wrap it up and store it in your fridge for 3-5 days.
Simply, reheat it in a toaster or a nonstick pan over medium-low heat until warm and crisp.
