I’m a fan of every season, even summer. But, I love it when spring starts to enter the picture. Sometimes it’s as if the weather can’t seem to make up its mind. It’s hot. It’s cold. It’s hot…you get the picture.

But, I’m an even bigger fan of the food during the spring. It’s almost as if anything could work. Whether it’s nice cold summer dishes or a few holdovers from winter it doesn’t really matter. Spring is like a blank slate for cooking and dining.

So, I thought I would put together a few of my favorite recipes I typically enjoy during the spring months. These vegan spring recipes are very broad and sure to satisfy anyone’s palette.

    I LOVE all you recipes. Thank you for sharing them. So easy, simple ingredients.
    In the past, the other Vegan recipes I found were complicated, and strange ingredients.
    My husband has Celiacs and must be Gluten Free. In most cases, it is easy to substitute Gluten Free Flour for Wheat Flour. Thank you so much.

    I just discovered you about a month ago and have downloaded multiple recipes and put them all in a notebook. I have been cooking them and LOVE them. What I am lacking now is a vegan oil free, nut free, coconut free, tofu free, snack or two that are dry enough to take in a plastic baggie and put in my purse. (*_*) Thank you so much.
